As Osteria Francescana celebrates its 30th anniversary, this year’s theme is Miseria e Nobiltà — Misery and Nobility. It’s a duality that runs through the entire Italian peninsula, from north to south. A theme that has shaped the Italian kitchen for centuries. Italian cuisine has never drawn its wealth from luxurious ingredients, but from the simplicity of what was available. Like our grandmothers, who taught us how to turn very little into something abundant, how to transform the ordinary into the extraordinary. The nobility of Italian cooking lies not in opulence, but in culture. In the care, thought, and refinement behind recipes passed down from generation to generation. Every dish is a story — a bridge between past and future, between the humble and the grand.
